Roasted Tomatoes and Zucchini - a Favorite Summer Side Dish

Levi and I love going to eat at Logan's. We don't go often, but usually, on the rare date-night, that is where we choose to go. We don't go for the steak though, because neither of us really care for steak. He goes for the chicken, and I go for the vegetables, and the rolls. Oh GOSH... The ROLLS!

I love most vegetables, but they have one side dish that I HAVE TO HAVE. It's their grilled vegetables on a skewer. It comes with tomatoes, zucchini, onions, and mushrooms. I don't like mushrooms AT ALL, and I like the onions, but not nearly much as I love zucchini and tomatoes, so I always order JUST the zucchini and tomatoes. And they make me SO HAPPY.

But like I said, we don't got there often, and I needed my delicious zucchini and tomatoes more often. I don't grill at all, and don't want to wait for Levi to do it! 🤣 So... I got to searching for a recipe for tomatoes and zucchinis that would make me happy. And I've found it.

It's not rocket science. It's not even slightly difficult. In fact, you probably don't even need a recipe if you want to play a little, but I'll link it in case you're interested. It is so delicious. For real. My whole family thinks so! Even the baby eats it. (Well with the exception of Daniel, my 3.5 year old, but he's so picky 🙄, his opinion doesn't actually count).

There are very few ingredients, and you probably already have all of them in your kitchen, so let's wash our baby tomatoes and cut our zucchinis, and get ready to cook!

What I Do:

According to the recipe, you quarter your zucchinis lengthwise and then slice them. It calls for four zucchinis, but this time I have three on hand, so we'll just have a little less. 😉 I'll probably be sad though, because I really love these!

The recipe also suggests two cups of baby tomatoes, and I don't have quite that much... I'll apparently be making these again in a few days because the tomatoes get SO YUMMY cooking them like this!

Put your tomatoes and zucchini in a bowl and mix together. Add 1 tbsp of olive oil. I don't measure this... I just add a little. I don't really measure the salt and pepper either... just sprinkle and mix. Lastly, add in about 1 tbsp of balsamic vinegar.

See... I TOLD YOU you probably have everything you need already. 😉

Spread your mixture on a baking sheet and roast in your oven (at 375) for 30-45 minutes. 45 minutes is a little too long with my oven, so watch your veggies and play with the time!

I like to put foil down on my cookie sheet for easy, quick clean up! If I fold the edges up like this, it keeps the oil and vinegar from running underneath, keeping it cleaner! 🙂
